Ingredients:

½ cup fresh mixed berries, plus more for topping
¾ cup all-purpose flour
½ tbsp arrowroot starch

¼ tsp baking soda
¾ tsp baking powder
½ cup coconut sugar
¼ cup soy milk
¼ cup+ 1 tbsp soy yogurt
One pinch sea salt
2 tbsp coconut oil

For the glaze:

½ tbsp soy milk
1 tbsp unrefined powdered sugar
½ tsp vanilla bean paste

Vegan Summer Berry Cake Glazed with Vanilla Bean Paste

Instructions:

  1. Warm up your oven to 180 degrees F and grease a 4’’ spring-form pan with little coconut oil.
  2. Dust with some flour and tap off an excess; keep aside.
  3. For the cake, stir the soy milk and yogurt in a large bowl to mix well.
  4. Whisk in coconut oil as well as coconut sugar until mixed thoroughly and stir in vanilla bean paste.
  5. Combine the dry ingredients in a separate bowl and sift thrice before folding it into the wet ingredients gradually.
  6. Once they blend into a uniform, smooth batter, throw in the mixed berries and stir to distribute them evenly.
  7. Tip the batter into the prepared pan and scatter more berries on top.
  8. Pop into the preheated oven to bake for 10 minutes and lower the heat to 170 degrees F before baking it further for another half an hour or until it is baked through.
  9. Remove from oven and allow to cool completely.
  10. For the glaze, combine all its ingredients until it is attains a drizzling consistency.
  11. Drip it on top of the cooled cake to coat evenly and set aside until it sets.
