Side note: Now I don't know about you but after watching the chef create this fine dish on the video all I could think about was every time my Mom made pork chops she always served them with applesauce. I never knew why and never thought to ask her but this recipe brought it all back to days gone by. The funny thing is I mentioned this to my long time and dear friend and she said her mom did the same thing--they always had pork chops with applesauce said it must have been our era to serve pork that way. Well, my curiosity got the best of me so I did some research and found out that people have been using applesauce with pork chops or cooking apples with pork for many centuries dating back to the 1300s. The reason, the acidity in the apples helped to digest fat and back in those days, (unlike today) the quality of the pork was not as good. So there you have it!

Vanilla Caramelized Apples with Pork Tenderloin Recipe

Serving for Two (2)

Prep time:
10 minutes for Apples
10 minutes for Pork

Cook time:
5 to 10 minutes for the apples
30 to 45 minutes for the Pork tenderloin

Ingredients

Pork Tenderloin – 1 to 2 pounds
Two Apples – Granny Smith, Pink Lady, or Honeycrisp apples (best for recipe)
Brown sugar
Pure Vanilla Extract
Kosher Salt
Course Ground Black Pepper
Dry Oregano
Dry Rosemary (adds great flavor to meats)
Powdered Garlic
Toasted Sesame Seed Oil
Spray Canola oil or bottled canola oil

Instructions for Vanilla Caramelized Apples Glaze

  1. Peel and Core apples, slice apples into blades, immediately put into a mixing bowl.
  2. Add 1/4 brown sugar
  3. Pinch of Kosher Salt
  4. Dash of Cracker Pepper
  5. Add 1 cup of water
  6. Add 1 tsp of Pure Vanilla Extract
  7. Mix with your hand until the sugar dissolves
  8. Then place in a short saucepan on the stove and simmer for 5 to 10 minutes until the sauce becomes thick. You just want the apples to start to breakdown. Do not overcook or the apples will turn to mush or applesauce. So keep an eye on them.

Instructions for Pork Tenderloin

Preheat oven to 375 degrees
Cooking time: 30 to 45 minutes (remove when medium) slightly pink in middle

  1. Lay the piece of pork on your cutting board
  2. Trim any small strips of fat if needed. Leave the larger fat section intact as it really adds to the flavor while it roasts in the oven. Do not make any other cuts to the pork.
  3. Spray the meat with Canola Oil
  4. Place the pork tenderloin on a foil-lined shallow baking pan (or a deep cookie sheet is fine too)
  5. Season the tenderloin with the following:
  6. Sprinkle some Kosher Salt over the pork
  7. Dust with course ground black pepper – if you have a pepper grinder set to course, or you use store bought course ground pepper it is much more flavorful than fine grind pepper in a can.
  8. Sprinkle with some dry Oregano
  9. Sprinkle some Rosemary (adds great flavor to meats)
  10. Sprinkle on some Powdered Garlic
  11. Drizzle with toasted Sesame Seed Oil - The oil added will help the dried herbs open up their flavor.
  12. Use your hands to rub seasonings into the pork and make sure the seasonings are spread out evenly.
  13. Shape the pork with your hands into a long cylinder shape so it bakes nice.
  14. Put in 375° Fahrenheit (pre-heated oven) for 30 to 45 minutes.
  15. Start checking on doneness after 30 minutes, as you want the meat to be medium color, a little pink in the middle, but not much. You don't want it rare at all. Pork Tenderloin is traditionally cooked to medium rare, if you overcook, it will get tougher and drier.
  16. After you take it out of the oven, let it rest for 5 to 10 minutes before preparing to serve.

Serving

  1. Take the vanilla glazed apples from the stove.
  2. Cut the pork into medallions (½ thick slices), place two slices on a plate.
  3. Top with the vanilla caramelized apples (a good portion so you get apples with every bite).
  4. You can also add a sprinkling of finely sliced baby sage and some minced red onion.
