The medley of refreshing citrusy tartness with crunchy salad greens compliments the smoky flavors of grilled chicken. But it’s the sweet, floral note of Tahitian pure vanilla extract which makes the salad scream, “Devour me now!" Charred chicken makes it heartier and turns this salad into an ideal dish for light lunch. Serves: 8

Ingredients:

For the grilled chicken:

4 boneless, skinless chicken breast halves, 10 oz each
¼ cup extra-virgin olive oil
1 tbsp minced garlic
2 tbsp fresh lemon juice

For the green salad:

8 cups mixed salad greens
1/3 cup red onion, finely diced
1 1/3 cup celery, chopped
1/3 cup fresh cilantro, minced
1 1/3 cups orange segments

For the vinaigrette:

2/3 cup canola oil
2/3 cup fresh orange juice
1 tbsp fresh lime juice
3 tbsp fresh lemon juice
¾ tsp Tahitian pure vanilla extract or seed pulp of 1 fresh vanilla bean
¾ tsp lime zest, grated
1 tsp lemon zest, grated
2 ½ tsp orange zest, grated
2 tbsp honey
1/8 tsp coarse salt
¼ tsp coarsely ground black pepper

Grilled Chicken Salad with Citrus French Vanilla Vinaigrette Instructions:

  1. For the grilled chicken, pour lemon juice into ¼ cup oil and whisk them together along with minced garlic until well combined.
  2. Arrange the chicken breast halves on a shallow dish and drizzle the marinade over them.
  3. Flip them over to coat either side and refrigerate, covered, for a couple of hours to marinate.
  4. Fire up your grill and preheat to medium-high.
  5. Drain out the chicken from its marinade and place them on the pre-oiled grill rack, spaced slightly apart.
  6. Grill the chicken for 20 minutes, flipping them over occasionally, until their internal temperature rises to 165 degrees F.
  7. Transfer them onto a shallow dish and set aside to cool completely.
  8. Cut them into thick diagonal slices and keep aside until the salad is ready.
  9. For the vinaigrette, place all its ingredients, except oil, into a blender.
  10. Pulse briskly to mix well and pour in oil in a thin, steady stream while the motor runs until mixed thoroughly into a thick emulsion.
  11. Pour the mixture into an airtight jar and refrigerate.
  12. Dump the oranges, salad greens, chopped onion and celery into a large mixing bowl.
  13. Toss with minced cilantro until well combined and pour ¾ cup of prepared vinaigrette on top.
  14. Toss further to dress the salad ingredients uniformly and divide the salad equally among 8 serving plates.
  15. Arrange the grilled chicken slices on top and serve.
