Classic Madeleines with a Gourmet Vanilla Bean Twist - Ingredients and Instructions

Yields: 12 medium madeleines


2/3 cup all-purpose flour
½ cup granulated sugar
¾ tsp baking powder
2 large eggs, at room temperature
½ tsp salt
½ Madagascar Grade A vanilla bean, seeds scraped out
¾ stick unsalted butter, melted and cooled
Icing sugar, for dusting


  1. Warm up your oven to 400 degrees F
  2. Combine the flour, salt and baking powder in a medium bowl.
  3. Rub the sugar against the vanilla bean into a separate large mixing bowl until fragrant; discard the bean.
  4. Crack the eggs into the 2nd bowl and whisk them thoroughly with an electric mixer at moderate speed for a couple of minutes or until well combined.
  5. Stir in the scraped vanilla seeds until evenly incorporated.
  6. Add the dry ingredients gradually and fold them into the egg mixture after each addition until thoroughly mixed into a smooth batter.
  7. Pour in melted butter and stir to combine.
  8. Grease the seashell-shaped madeleine molds with a small knob of extra softened butter and dust with flour; tap off any excess.
  9. Drop small spoonfuls of the batter into the molds and place the pan on the central rack in the hot oven.
  10. Bake for 11-13 minutes or until golden brown and appear slightly crispy on touch.
  11. Take out the pan from the oven and set aside until cool enough to touch.
  12. Remove the madeleines from the molds and transfer them onto a wire rack.
  13. Allow to cool completely.
  14. And dust with icing sugar for an extra dose of sweetness.
