Ingredients and Instructions for Chicken Chocolatey Chili using Pure Chocolate Extract

Serves: 4


1 can red kidney beans, drained
3 boneless, skinless chicken breasts, medium diced
1 can (7 oz) diced green chilies
4 garlic cloves, minced
1 cup red onion, finely diced
1 can (28 oz) chopped tomatoes, with juice
½ cup Parmesan cheese, freshly grated
1 can (28 oz) tomato sauce
2 tsp pure chocolate extract
1 cup organic, low-sodium chicken broth
1 tbsp dried oregano
2 tbsp dried parsley
2 tsp ground cumin
1 tsp kosher salt
¼ tsp cayenne pepper
2 tbsp olive oil


  1. Drizzle oil in a medium saucepan and heat over moderately high flame until it shimmers.
  2. Toss the chicken chunks into the pan and sauté for 4-5 minutes, stirring occasionally, until they brown uniformly.
  3. Drain them out using slotted spoon and keep aside in a bowl.
  4. Sauté the chopped onion into the pan, stirring at times, until it caramelizes and stir in minced garlic.
  5. Continue to cook for another minute and empty a cup of chicken stock into the pan to deglaze.
  6. Transfer this mixture into a large stock pot and plop the cooked chicken chunks into it.
  7. Pour the canned tomatoes along with the juice and sauce into the pot.
  8. Scatter the dried herbs, cayenne pepper, cumin and a dash of salt over them along with the drained chilies from the can.
  9. Place a lid on top and bring the mixture to a simmer.
  10. Continue to cook likewise for half an hour, stirring it at intervals.
  11. Add the kidney beans and splash in a little of the pure chocolate extract.
  12. Stir to mix properly and continue to cook for another 10 minutes or until the beans are tender.
  13. Ladle it into serving bowls and sprinkle grated Parmesan cheese on top.
  14. You can add a small amount of other garnishes, such as fresh parsley or cilantro, depending on your taste and preference.
  15. Serve hot with chunks of crusty bread.
